If your order is placed before 12 noon it will be ready after 1PM same day and the order is placed after 12PM it will be ready for pickup at 7AM the following day.  Orders will be held for 3 business days unless other arrangements have been made.

Short Ribs

These come from the lower part of the rib cage (below the prime rib) and have a nice layer of fatn making them very full of flavor. Many people slow cook them in a crock pot or braising them.


Skirt Steak

The skirt steak is a long flat piece of meat that comes from under the rib. It is not the most tender piece of meat but is very flavorful when cooked, many chefs cook it in a cast iron skillet.


Spare Ribs

Spareribs are flatter and contain more bone than meat, but more fat that can make the ribs more tender than back ribs.


Hard beef fat from inside the cow which is perfect for feeding birds.
